I love this recipe because it is easy and fast to put together. When you need something to impress that is elegant and flavorful this is one of my go tos. I also really love to make it in the summer when the berries are sweet and in season. It doesn’t need much, just a dollop of fresh whipped or some powdered sugar. Try it, you'll love it!
Set the oven to 350 degrees. Line the bottom of a 9 inch cake pan and spray with nonstick spray. Using a mixer cream the butter and sugar until light and fluffy. Next mix in the eggs once at a time. Then add the vanilla. In a separate bowl, sift together the flour, salt, and baking powder. Fold in ⅓ of the flour then ½ the sour cream. Then ⅓ of the flour and the other half of sour cream. Finally fold in the last ⅓ of flour. Try not to over mix. Fold until incorporated only.
Lastly, cut the strawberries and fold in the batter. I like to quarter my strawberries, not slice. So I have more of a bite. Pour the batter into the prepared cake pan and level. Place in the oven and bake for about 50 minutes. Remove from the oven and let cool before taking out of the pan. Sprinkle it with powdered sugar and serve with fresh whipped cream.
