Scottish Shortbread Cookies

Crisp buttery cookies with a melt in your mouth crumbly texture.

Shortbread cookies are my absolute favorite! They are not fancy, complicated or hard to make. With only 3 ingredients: flour, butter and sugar you can throw them together anytime. Their crisp buttery flavor is the perfect afternoon snack with a cup of coffee.

What ingredients do you need for Scottish shortbread cookies?

  • All-Purpose Flour
  • Butter
  • Sugar
  • Vanilla
  • Fine Sea salt
  • Corn Starch
  • Sanding or Finishing Sugar, Optional

The Recipe

Using an electric mixer, beat the butter and sugar together until light and fluffy, Mix in the salt and vanilla. Place the flour, salt, and cornstarch in a bowl and whisk together. Add the flour to the butter and mix until combined. Do not over mix or you will activate the gluten. This will make them tough. Wrap dough in plastic and chill in the refrigerator for at least 4 hours.

Set the oven to 325 degrees. When the dough is chilled, remove and roll out in a rectangle shape. Cut into narrow rectangles or cut out into shapes. Using a fork prick them in a pattern. Sprinkle it with sugar and place on a lined sheet pan. Bake for 30 minutes. Remove from the oven and let cool before removing from the pan.

Recipe Tips:

  • To change things up you could add some spices such as ground ginger, cinnamon or allspice.
  • You could also add chopped dried fruit or chocolate chips.

Make Ahead:
  • I find it is best to make them at least the day before so they are cooled and set.

Storing tips:
  • Store cookies in an airtight container so they do not get soggy.
  • These cookies freeze really well so they are great make ahead cookies for the holidays.
