Strawberry Clafouti Cake
A simple elegant french country dessert perfect for a summer get together using seasonal sweet strawberries in a light moist cake.

Ingredients
- 8oz sweet butter
- ¾ cup sugar
- 2 eggs
- 1 tablespoon vanilla
- 11/2 cup flour
- 1 ½ teaspoon baking powder
- Pinch salt
- ¾ cup sour cream
- 2 cups strawberries
- 9 inch cake pan
Instructions
- Set the oven to 350 degrees.
- Line the bottom of a 9 inch cake pan and spray with nonstick spray.
- Using a mixer cream the butter and sugar until light and fluffy.
- Next mix in the eggs once at a time. Then add the vanilla.
- In a separate bowl, sift together the flour, salt, and baking powder.
- Fold in ⅓ of the flour then ½ the sour cream. Then ⅓ of the flour and the other half of sour cream.
- Finally fold in the last ⅓ of flour. Try not to over mix. Fold until incorporated only.
- Lastly, cut the strawberries and fold in the batter. I like to quarter my strawberries, not slice. So I have more of a bite.
- Pour the batter into the prepared cake pan and level.
- Place in the oven and bake for about 50 minutes.
- Remove from the oven and let cool before taking out of the pan.
- Sprinkle it with powdered sugar and serve with fresh whipped cream.
