The best thing about making pickled onions is that all you have to do is mix everything together and just wait. The ingredients are all pantry staples that we should all have already. If you have never tasted them, then you are in for a treat. They can brighten up so many recipes such as tacos, grilled chicken or fish, sandwiches or salads. Pickled red onions are also my favorite because they become such a lovely magenta color which adds so much to your plate.
Mix all ingredients together and let sit for at least one hour. These will last in the refrigerator for up to one month.
