You might remember me saying that I love corn on the cob. I never thought that I would like it any other way than with lots of butter, but I decided to give this version a try. I was at a cookout a few years ago and this was on the menu. I was surprised how much flavor the acidic lemon and salt heightened the corn flavor and I loved it! If you are looking for a low fat or dairy free side dish, this is what you need.
Fill a large pot with water and bring to a boil. Shuck corn removing all of the silk threads. When water is boiling, carefully drip the corn in and simmer for 5 minutes. Remove from the pot and cut lemons in half. Rub each ear of corn with the cut lemon and then sprinkle with sea salt.
