I have always felt that Gallets are the easy rustic French cousin of the American Pie. They can be filled with sweet or savory fillings and put together in minutes. I try to always have pie dough in my freezer, so if I see something in season while shopping I can put together an elegant dessert or lunch in a flash!
For the blueberry mixture, mix together fresh blueberries, sugar, cornstarch, vanilla extract, and zest of 1 lemon.
Set the oven to 400 degrees Fahrenheit. Roll out pie dough and place on a parchment lined baking sheet.
Place blueberry mixture in the center. Making sure to leave a 2 inch border on the outside of the dough. Fold the pie dough creating a pleat that allows the dough to overlap as you create a crust around the entire dough. Brush the crust with a whole beaten egg. Then sprinkle the outside crush with sugar in the raw.
Bake for 35-40 minutes until golden brown. Let cool before you move the galette, you want the dough to fully set.
