Lemon Blueberry Galette

An easy rustic French pastry similar to a pie or tart that is filled with sweet fresh blueberries flavored with lemon zest and formed in a flaky buttery crust.

I have always felt that Gallets are the easy rustic French cousin of the American Pie. They can be filled with sweet or savory fillings and put together in minutes. I try to always have pie dough in my freezer, so if I see something in season while shopping I can put together an elegant dessert or lunch in a flash!

  • Granulated Sugar
  • Cornstarch
  • Vanilla Extract
  • Lemon
  • Egg
  • Sugar In The Raw

The Recipe..

For the blueberry mixture, mix together fresh blueberries, sugar, cornstarch, vanilla extract, and zest of 1 lemon.

Set the oven to 400 degrees Fahrenheit. Roll out pie dough and place on a parchment lined baking sheet.

Place blueberry mixture in the center. Making sure to leave a 2 inch border on the outside of the dough. Fold the pie dough creating a pleat that allows the dough to overlap as you create a crust around the entire dough. Brush the crust with a whole beaten egg. Then sprinkle the outside crush with sugar in the raw.

Bake for 35-40 minutes until golden brown. Let cool before you move the galette, you want the dough to fully set.

  • You can buy pre-made pie dough from the grocery store.
  • Whenever you’re going to make pie dough, make a dough batch. Make pie dough for the recipe that you are intending to use for. And then have an extra pie dough in your refrigerator on hand for recipes like this.
  • These pie dough recipes make 2 large or 4 small galettes.
  • You can customize this galette based off of what is in your fridge.
  • You can add any type of berries.
  • Use fresh berries, if they are in season. If not, you can use frozen berries. To adjust for the extra juices, add an extra tablespoon of cornstarch. After everything is mixed, use a slotted spoon to take the berries out of any extra liquid. This will prevent the dough from getting too soggy.
  • You can serve this with ice cream or fresh whipped cream.


Make Ahead:

  • For best texture and flavor make the gallet within 24 hours of serving.


Storing tips:

  • Store your galette at room temperature for 24 hours and then after store in the refrigerator. Once in the refrigerator the crust can get soggy.
