Lemon Blueberry Galette

An easy rustic French pastry similar to a pie or tart that is filled with sweet fresh blueberries flavored with lemon zest and formed in a flaky buttery crust.

Ingredients

  • 1 pound fresh blueberries
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon vanilla extract
  • 1 lemon, zested
  • 1 egg
  • 2 tablespoons of sugar in the raw
  • Store Bought Pie Dough or find use our recipe for Pie Dough

Instructions

Blueberry Mixture Instructions:

  1. Mixture together fresh blueberries, sugar, cornstarch, vanilla extract, and zest of 1 lemon.


Put it all together:

  1. Set the oven to 400 degrees Fahrenheit.  
  2. Roll out pie dough and place on a parchment lined baking sheet.
  3. Place blueberry mixture in the center. Making sure to leave a 2 inch border on the outside of the dough.
  4. Fold the pie dough creating a pleat that allows the dough to overlap as you create a crust around the entire dough.
  5. Brush the crust with a whole beaten egg. Then sprinkle the outside crush with sugar in the raw.
  6. Bake for 35-40 minutes until golden brown.
  7. Let cool before you move the galette, you want the dough to fully set.
