Grilled Asparagus With Lemon and Parmesan

Crispy charred asparagus dressed with zingy lemon zest and salty parmesan cheese.

While you can blanch, roast, steam or broil asparagus. My favorite way to cook it is to grill it over high heat. It is quick, easy, and the char packs in the flavor. You do not need a lot of ingredients because you want to enhance the fresh asparagus flavor not cover it up. So keep it simple and let the fresh spring flavor shine through.

  • Asparagus
  • Parmesan
  • Lemon
  • Extra Virgin Olive Oil
  • Maldon Sea Salt
  • Black Pepper

The Recipe

Clean and oil your grill with high heat oil such as vegetable oil. Snap the bottoms of the asparagus to remove the tough ends and place on a heated grill. Be patient and let the asparagus cook. Do not keep moving them around. Let the heat build so you get nice grill marks on one side. Do not over cook. Remove when they are soft but still crisp. Place asparagus on a platter and drizzle with extra virgin olive then lemon zest over top. Sprinkle with parmesan and season with salt and pepper.

Recipe Tips:

  • You can also use other grilled vegetables such as zucchini or eggplant in this recipe.
  • I like to serve asparagus at room temperature. That way I can cook them earlier in the day before serving.

Make Ahead:
  • While I prefer to grill the day of service, you could grill the day before and then dress before serving.

Storing tips:
  • Store any leftovers in the refrigerator for up to 4 days.

  • 1 cup parmesan
  • 1 lemon, zested  
  • 1/4 cup extra virgin olive oil
  • Maldon sea salt
  • Black pepper
