Individual light and crispy popovers.
While popovers or Yorkshire pudding in English might look fancy and hard to make, they are actually super easy and quick to put together. I love how crispy they are and they make the best side dish for anything with lots of gravy. I have also used them for breakfast and filled them with scrambled eggs and salsa!
Preheat the oven to 450 degrees. Place 1 tablespoons of fat or oil in each muffin space then place pans in the oven to get hot. Place the eggs, flour, milk, salt, and pepper in a bowl and beat until completely combined. Pour batter into a measuring cup or pitcher so it is easier to pour. When the muffin tin is very hot, remove from the oven and carefully fill each space 3/4 full. I suggest placing the muffin pan on a sheet pan so it is easier and safer to carry. Place this back in the oven and cook for approximately 35-40 minutes or until dark golden brown and crispy. Serve right away.
