Making overnight oats is easy, delicious and the perfect start to your day. You can make a batch at the beginning of your week and customize them with different toppings. While many people use regular oats, I enjoy the little bit of crunch that the steel cut oats bring. This recipe is also one of my favorites because of the rich caramel flavor of the brown sugar. Using fresh seasonal berries at their sweetest makes this an amazing combination that is also filling and good for you.
Place oats, vanilla, cinnamon, brown sugar, and milk in a glass container and let soak overnight in the refrigerator.
In the morning place oats in a small sauce pot and bring to a simmer for about 10 minutes. You may need to add more milk or water. When cooked through, remove from heat. Taste and add sea salt and more brown sugar if you want it sweeter. Layer berries and oats in a bowl or parfait glass and enjoy.
