Fresh smashed blueberries muddled with a sweet ginger syrup and refreshing lemon vodka topped with fizzy soda.
When blueberries are in season, I try to incorporate them in as many recipes as I can. When I get down to the sweet ripe and slightly soft ones, I like to smash them and create an amazing cocktail. This recipe uses one of my favorite pantry staples: ginger syrup. A little bit brings so much flavor and a little spice. You can make a big batch and keep it on hand for the perfect sundown cocktail with guests or just to treat yourself.
Ginger syrup: Place water, sugar and ruff chopped ginger in a sauce pot and stir together. Bring to a boil and let simmer for 10 minutes. Remove from the heat and cool down. Strain the ginger out and store in the refrigerator.
Blueberry Ginger cocktail: Place berries in a shaker and smash using a muddler. Add the syrup and vodka, ice and shake. Strain and pour into a glass filled with crushed ice. Top with soda water and garnish with fresh blueberries.
