Lemon Scented Creme Brûlée


Sweet and creamy lemon custard with a crispy burnt sugar crust.


Great Creme Brûlée is rich and creamy with a thick layer of burnt sugar all across the top. It should not have bubbles in the custard and should not be too deep. You want to have a bit of the crust in every bite. It is a grown up elegant custard and is the perfect end to any dinner!

  • Heavy Cream
  • Eggs
  • Sugar
  • Lemon
  • Vanilla
  • Raspberries
  • Mint

The Recipe...


Set the oven to 350 degrees. Gently separate yolks from egg whites. Mix egg yolks with a fork.

Pour cream in a large bowl and mix in yolks, sugar, lemon zest, and vanilla. Be careful not to whip at this stage, you do NOT want bubbles in the custard. Place ramekins on a sheet pan and pour water halfway up the side. Place in a 350 degrees oven and bake for approximately 25-30 minutes or until almost set but still jiggles like jello.

Remove from the oven and let cool to room temperature so that they set. When ready to serve, sprinkle it with sugar and brûlée using a torch. You want to build the crust with multiple layers of burnt sugar to get the ideal crunch. Garnish with raspberries and fresh mint.

Recipe Tips?

  • If you don’t have a torch, you can try to do this under a broiler. You have to continuously watch so as not to burn the custard.
  • When burning the sugar with a torch, it is important to layer the sugar. Add a little sugar at a time and build a thick crust. If you put too much on at once the sugar will get too dark and you won’t get a consistent color or thickness.


Make Ahead?

  • The custard can be made up to two days ahead and then brûléed before serving.
  • The sugar will melt and not be crispy if it sits around for more than an hour.


Storing tips?

Store the custard in the refrigerator for 2-3 days.
