“Growing up in Connecticut, we had whole summer meals centered around organic red tomatoes and sweet Jersey corn. Both do not need much, just some salt, butter, and maybe some balsamic vinegar.


There was an older man, John, that lived next door to us. He had the most amazing garden and he was willing to share with us as long as my Mom cooked. It worked out well and many amazing meals were eaten!


When I was all grown and cooking family dinners myself, I started grilling all types of vegetables, including tomatoes. If I topped them with fresh mozzarella as soon as they came off the grill, it would melt and soon became everyone’s favorite side dish. Ingredients

  • 3 beefsteak tomatoes, sliced 1 inch thick
  • 2 balls fresh mozzarella, sliced 1/2 inch thick
  • 2 tablespoons fresh basil, chiffonade
  • Large flake sea salt
  • Ground black pepper

Instructions

  1. Heat a clean grill and brush with a high smoke point oil.
  2. Slice tomatoes horizontally into 2/3 slices, so they are about 1 inch thick.
  3. Place tomatoes on a high heat grill and do not touch until they have nice grill marks, and then flip over.
  4. Remove from the grill and immediately top with a slice of fresh mozzarella, so that it melts.
  5. Chiffonade basil (roll and slice thinly) and garnish tomatoes with basil.
  6. Season with flake sea salt and ground black pepper.
