Refreshingly light potato salad with crisp juicy green apples and creamy flavorful mayonnaise dressing. A perfect side for any meal!
This is my favorite potato salad! I was introduced to this recipe by my neighbor. She learned it from a friend who invented it to get her kid to eat more fruit!
I did change a few things, but it really is her recipe because the ingredient that makes the whole salad are the green apples. They bring a crunch and a zing of unexpected flavor. For me, potato salad was a little boring and felt too heavy. The addition of the apples changed everything. Give it a try, I know you will love it!
What do you need to make creamy potato salad with green apples?
Cut the potatoes and place in a large pot. Cover the potatoes with salted water and cook the potatoes at a simmer for about 15 minutes, until they are fork tender. Drain the potatoes.
Place the eggs in a small pot and cover with water. Bring the water to a full boil and cook for 12 minutes. Strain and let cool. Then peel and chop.
While the potatoes are cooling, mix together mayonnaise, sour cream, worcestershire, and vinegar. Season with salt and pepper.
Cut the apples into small pieces and fold all ingredients together. Season with salt and pepper to taste. Place in the refrigerator until chilled completely.
