Fresh classic chicken salad with apples, grapes, and crispy celery in a creamy mayonnaise dressing.


Waldorf salad was created over 100 years ago at the Waldorf Astoria hotel in NYC. There is a reason that it has continued to be made and enjoyed for a century. The balance of flavors between the sweet grapes, tart apples, bitter walnuts and slightly acidic dressing hit all the taste buds and makes you say “Yummmm!” While it is traditionally served on a bed of lettuce, it is versatile enough to go on a sandwich, fill a pastry crust or roll it in a flatbread.

What ingredients do you need for a chicken waldorf salad?

  • Chicken Breast
  • Seedless Red Grapes
  • Green Apple
  • Celery
  • Walnuts
  • Italian Parsley
  • Mayonnaise
  • White Balsamic Vinegar
  • Lemon
  • Sea Salt
  • Black Pepper

The Recipe...

Cook chicken breast either by poaching in salted water or roasting in the oven until fully cooked. Let cool and cut into a small dice. I prefer to poach because the color will stay white instead of golden brown.


In a large bowl, mix together all the rest of the ingredients and fold in diced chicken. Let chill for 2 hours and then recheck for salt.

Recipe Tips:

  • If possible I like to use Granny Smith Apples but any tart crisp apple works best. Do not peel them, you want to see the color.
  • Toast your walnuts to bring out their flavor either by placing them in a dry sauté pan and heating on the stove or placing on a sheet pan and toasting in the oven at 350 degrees.


Make Ahead:

  • I suggest Making this recipe ahead of time so it can chill and the flavors can marry.
  • You can cook the chicken ahead and then make the salad on the day of service.


Storing tips:

  • Store in an airtight container for up to 5 days on the refrigerator
  • Because of the fruit this recipe does not freeze well.

  • 8 oz chicken breast
  • 1 cup seedless red grapes
  • 1 cup green apple, diced
  • 1/2 cup celery, diced
  • 1 cup walnuts, chopped and toasted
  • 1/2 cup Italian parsley, rough chopped
  • 1 cup mayonnaise
  • 2 tablespoons white balsamic vinegar
  • 1 lemon, zested
  • 1 lemon, juiced  
  • Sea salt
  • Black pepper
