Waldorf salad was created over 100 years ago at the Waldorf Astoria hotel in NYC. There is a reason that it has continued to be made and enjoyed for a century. The balance of flavors between the sweet grapes, tart apples, bitter walnuts and slightly acidic dressing hit all the taste buds and makes you say “Yummmm!” While it is traditionally served on a bed of lettuce, it is versatile enough to go on a sandwich, fill a pastry crust or roll it in a flatbread.
Cook chicken breast either by poaching in salted water or roasting in the oven until fully cooked. Let cool and cut into a small dice. I prefer to poach because the color will stay white instead of golden brown.
In a large bowl, mix together all the rest of the ingredients and fold in diced chicken. Let chill for 2 hours and then recheck for salt.
