Ingredients
- 8 oz chicken breast
- 1 cup seedless red grapes
- 1 cup green apple, diced
- 1/2 cup celery, diced
- 1 cup walnuts, chopped and toasted
- 1/2 cup Italian parsley, rough chopped
- 1 cup mayonnaise
- 2 tablespoons white balsamic vinegar
- 1 lemon, zested
- 1 lemon, juiced
- Sea salt
- Black pepper
Instructions
- Cook chicken breast either by poaching in salted water or roasting in the oven until fully cooked. Let cool and cut into a small dice. I prefer to poach because the color will stay white instead of golden brown.
- In a large bowl, mix together all the rest of the ingredients and fold in diced chicken.
- Let chill for 2 hours and then recheck for salt.
