Chicken Waldorf Salad

Fresh classic chicken salad with apples, grapes, and crispy celery in a creamy mayonnaise dressing.

Ingredients

  • 8 oz chicken breast
  • 1 cup seedless red grapes
  • 1 cup green apple, diced
  • 1/2 cup celery, diced
  • 1 cup walnuts, chopped and toasted
  • 1/2 cup Italian parsley, rough chopped
  • 1 cup mayonnaise
  • 2 tablespoons white balsamic vinegar
  • 1 lemon, zested
  • 1 lemon, juiced  
  • Sea salt
  • Black pepper

Instructions

  1. Cook chicken breast either by poaching in salted water or roasting in the oven until fully cooked. Let cool and cut into a small dice. I prefer to poach because the color will stay white instead of golden brown.
  2. In a large bowl, mix together all the rest of the ingredients and fold in diced chicken.
  3. Let chill for 2 hours and then recheck for salt.
