Mediterranean Feta Salad

A rustic fresh chopped salad with tomatoes, cucumbers, feta cheese, onions, and peppers dressed with olive oil, vinegar and fresh herbs.

This is one of the go to salads in our house year round. I love that it is so fresh and so easy to put together. It also goes with just about any dinner. It is crunchy, flavorful and can be served for lunch, dinner or as a great afternoon snack.

What ingredients do you need for a Mediterranean feta salad?

  • Cucumber
  • Grape Tomatoes
  • Red Peppers
  • Italian Parsley
  • Red Onion
  • Green Onions
  • Feta Cheese
  • White Balsamic Vinegar
  • Olive Oil
  • Sea Salt

The Recipe

Place all the diced and chopped ingredients in a large mixing bowl and combine. Add vinegar and oil and taste. I like my salad not so acidic. If you like more vinegar add a little more and taste again. Next taste and season with salt and pepper.

Recipe Tips:

  • I sometimes add other ingredients such as black or green pitted olives or artichoke hearts. You can also add other fresh herbs such as mint or cilantro.

Make Ahead:
  • For best freshness mix all ingredients together the day of service. You can prepare everything the day before just keep them separated until you want to serve them.
Storing tips:
  • Store in an airtight container in the refrigerator for 2 days. I find after that it can get mushy.

Ingredients

  • 1 cucumber, diced
  • 1 container grape tomatoes, cut in half
  • 1 red peppers, diced
  • 1 cup Italian parsley, chopped
  • ½ red onion, diced
  • 4 green onions, sliced
  • ½ lb. feta cheese, diced
  • 1/4 cup white balsamic vinegar
  • 1/2 cup olive oil
  • Sea salt
  • Black pepper
