Charred Tomato Bread with Garlic


Crispy charred tomato bread with olive oil and garlic. A simple and easy appetizer to make for a stress-free tapas party.


I love Tapas! I really do. I love sitting around with friends and eating a little bit of this and a little bit of that. I enjoy the idea of a communal table served family style.  And tapas are perfect for this!


Tomatoes are currently in season and I can not get enough of them! I try to utilize fruits and vegetables when they are in season. And the tomatoes lately have been perfectly ripe and flavorful.


It’s not unusual for me to serve all kinds of contrasting flavors at the same time. Who says you have to eat your veggies first? But two things I always have when serving Tapas because they go with everything are traditional Catalan tomato bread and grilled sausages.



What ingredients do I need for charred tomato bread with garlic?

  • Loaf Crusty European Style Bread
  • Olive Oil
  • Cloves Roasted Garlic  
  • Plum Tomatoes
  • Large Flake Sea Salt
  • Cracked Black Pepper

Recipe Tips?

  • Use roma tomatoes, you want something with a lot of flesh. You want to look for  tomatoes that are firm and bright red.
  • Don’t skip on the bread! Go for a good chewy European style bread.



How can I make this ahead of time?  

  • This dish should really be made right before you eat.
  • If you let it sit too long, the bread will get mushy.


Storing tips:

  • Unfortunately tomato bread really doesn't hold up well. The bread will get soggy after a while.  It should be cooked right before serving.

Ingredients

  • 1 loaf crusty European style bread, cut into slices
  • 1 cup olive oil
  • 8 cloves of roasted garlic  
  • 2 plum tomatoes, cut in half
  • Large flake sea salt
  • Cracked black pepper
  • Instructions

    1. Turn on the grill or saute pan to medium-high heat.
    2. Drizzle olive oil on bread slices. Do not be stingy, you want to coat the bread with oil.  
    3. Place on grill or pan and cook until golden brown. If you feel like it is too dry, add more oil.
    4. Remove from the heat once the bread is golden brown and crispy.
    5. Smear bread with roast garlic.
    6. Cut tomatoes in half and rub the bread with the cut side of the tomato.
    7. Season with large flake sea salt and cracked black pepper.
