A crispy pastry tart smothered in sweet caramelized onions and goat cheese topped with fresh tender pea shoots.
Puff pastry is so versatile, it can be used in making something that is sweet or savory. I try to always have some in the freezer, just in case I need a quick appetizer for guests. One of my favorite ways to use puff pastry is to make a savory tart with caramelized onions. The combination of buttery and flakey pastry with sweet caramelized onions is mouth watering. But then add tangy goat cheese topped with fresh crisp pea shoots and this is the perfect elegant appetizer or a light lunch. People will be amazed how simple and flavorful it is and think you worked for hours on this instead of minutes.
Preheat the oven to 375 degrees. Julienne or slice the onions, then place in a sauté pan with roasted garlic oil. Cook on medium heat, stirring occasionally until onions are caramelized and sweet. If they get too hot and start to scorch, add a few tablespoons of water and scrape the bottom of the pan using a wooden spoon. Continue to cook until brown and caramelized. When almost done, add the chopped fresh thyme and season with salt and pepper.
While the onions are cooking, let the puff pastry defrost on the counter top, this should only take about 10 minutes. Using a rolling pin flatten and roll keeping the rectangle shape. Now using a large round cutter or bowl cut 4 circles. Try to get the biggest circle while also getting 4 out of 1 sheet of pastry.
Place a quarter of the onions in the center of each pastry spreading out, leaving an edge. Crumble goat cheese on top of each and then place in the oven for approximately 25 minutes or until the crust is golden brown. Place pea shoots in a large bowl and season lightly with olive oil, balsamic vinegar, sea salt, and black pepper. Place tart on a serving plate and top with pea shoots.
