Roasted Garlic Oil


Sweet oven roasted garlic cloves created simply from garlic and grape seed oil. This is a permanent staple in my pantry.


In my refrigerator at all times you will find roasted garlic. I use it for everything, from pasta and stir frys to salad dressings. Pretty much any time I’m cooking, I take my roasted garlic container and use it in a recipe.


If you follow my recipes, it's not hard to see that it pretty much goes in everything. I like roasted garlic, because it is sweeter and I don’t have to chop it. I really dislike buying chopped garlic in a jar, because it is either in water so it loses flavor or it has a lot of chemicals to stay fresh, which I don’t want! If a recipe calls for 1-2 cloves of garlic I will use at least double the roasted garlic because it's not as strong.

What ingredients do you need for roasted garlic oil?

  • Garlic Cloves
  • Grapeseed Oil


The Recipe...

Set the oven to 350 degrees. Place garlic and oil in a medium size saucepan and bring to a simmer on stove top.

When simmering, place in the oven and cook for approximately 30-40 minutes or until lightly golden brown. Do not let them get too dark or they will get tough and not smush into a nice paste well.

Recipe Tips:

Tip #1

  • You can substitute any high heat oil such as coconut, vegetable, corn or sunflower. Do not use olive oil. It has a low smoke point and should not get above 325 or it will burn and smoke.

Tip #2

  • I always buy the cleaned cloves at the grocery store. You can take the time and peel your own, but this does save a lot of time.

Tip #3

  • Sometimes I like to add bay leaves, fresh thyme or rosemary to the oil after I fill my glass jar.
  • You can give these as holiday gifts!

Tip #4

  • The oil is great to sauté with, make pasta sauce or salad dressings.

Tip #5

  • The cloves can be squashed and added to mash potatoes, risotto, salad dressings, garlic bread …. Their list is endless!

Make Ahead:

  • The finished roasted garlic will keep in a jar for at least a month. It never lasts that long in my house.
  • So it is a great project to get done while you have some time. It also makes your house smell amazing!

Storing tips:

  • Store in an airtight glass container in the refrigerator.
  • It has to be refrigerated because it is not pasteurized. Even if you separate the cloves from the oil, the oil needs to be refrigerated.

  • 2 cups grapeseed oil
