Set the oven to 350 degrees. Melt butter in the microwave or stove top. Carefully open thawed phyllo dough and remove 1 sheet. Lay it on a cutting board, using a pastry brush cover with melted butter. Lay 2 more sheets of phyllo on top of the first sheet of dough buttering in between each layer.
Mix blueberries, feta cheese, and green onions together in a bowl. Pour blueberries along the long edge of pastry and then roll creating a snake. Roll the snake into a circle and fold the end underneath. Butter pastry and place on a lined sheet pan. Season with salt and pepper. Bake in the oven for approximately 45 minutes or until golden brown and crispy.
