Blueberry Feta Burek

A buttery layered thin pastry dough, like Phyllo, that is filled with fresh blueberries and feta cheese. Then bake until it is crispy and golden brown.

Burek is traditionally made either filled with ground beef, cheese, spinach or my favorite, shredded apple. I figure it can be filled with just about anything. Traditionalists might not still call it Burek, but that is what we call it.” - Tara

What ingredients do you need for blueberry feta burek?

  • Phyllo Dough
  • Blueberries
  • Green Onions
  • Crumbled Feta Cheese
  • Butter
  • Sea Salt
  • Black Pepper

The Recipe

Set the oven to 350 degrees. Melt butter in the microwave or stove top. Carefully open thawed phyllo dough and remove 1 sheet. Lay it on a cutting board, using a pastry brush cover with melted butter. Lay 2 more sheets of phyllo on top of the first sheet of dough buttering in between each layer.

Mix blueberries, feta cheese, and green onions together in a bowl. Pour blueberries along the long edge of pastry and then roll creating a snake. Roll the snake into a circle and fold the end underneath. Butter pastry and place on a lined sheet pan. Season with salt and pepper. Bake in the oven for approximately 45 minutes or until golden brown and crispy.

Recipe Tips:

  • If you want to use frozen berries, mix in ¼ cup of cornstarch to soak up the extra liquid.
  • Other berries such as raspberries or strawberries can be used in this recipe.
  • Traditional Burek is made with ground beef, farmers cheese, shredded apples, or a creamed spinach mixture. There is really no limit to the different fillings you could use.

Make Ahead:
  • Burek is best served fresh and crispy, but you can prepare it up to two days ahead. Hold it in the refrigerator and then bake it off when you are ready to eat.

Storing tips:
  • Burek freezes very well and can be held in an airtight container for up to 3 months. To bake, go directly from the freezer to a preheated oven .
  • Store any leftovers in the refrigerator for up to 5 days.
