Old-Fashioned Ham with Mustard Maple Glaze

Ingredients
- 1 cup brown sugar
- ½ cup maple syrup
- 1/2 cup fresh orange Juice
- 1 orange, zestsed
- 1/4 cup honey
- 2 tablespoon white vinegar
- 1/4 cup whole grain mustard
- 1/2 teaspoon cinnamon
- 10 whole cloves
- 1 whole 12-15 pound spiral cut ham
Instructions
- Remove the ham from the refrigerator and let sit at room temperature for about 2 hours. This will help the ham cook more evenly in the oven.
- Set the oven to 350 ℉.
- In a small saucepan mix all sauce ingredients (everything but the ham) and bring to a simmer until the sugar is dissolved.
- Use 1/3 of the glaze to baste the ham. Then wrap the ham in aluminum foil using 2 separate pieces that overlap at the top. This will allow you to open and glaze without having to unwrap the whole ham.
- Place ham in a roasting pan and bake in the oven until the internal temperature reaches 100/110 ℉. This usually takes 15 minutes per pound.
- Remove the ham from the oven and increase the temperature to 400 degrees F.
- Carefully unwrap the foil, place back in the roasting pan and use another 1/3 of glaze to baste the ham
- Place back in the oven and bake until the ham begins to caramelize nicely (about 20 minutes).
- Remove from the oven and glaze with the last 1/3 of sauce.
