Old-Fashioned Ham with Mustard Maple Glaze

Ingredients

  • 1 cup brown sugar
  • ½ cup maple syrup
  • 1/2 cup fresh orange Juice
  • 1 orange, zestsed
  • 1/4 cup honey
  • 2 tablespoon white vinegar
  • 1/4 cup whole grain mustard
  • 1/2 teaspoon cinnamon
  • 10 whole cloves
  • 1 whole 12-15 pound spiral cut ham

Instructions

  1. Remove the ham from the refrigerator and let sit at room temperature for about 2 hours. This will help the ham cook more evenly in the oven.
  2. Set the oven to 350 ℉.
  3. In a small saucepan mix all sauce ingredients (everything but the ham) and bring to a simmer until the sugar is dissolved.
  4. Use 1/3 of the glaze to baste the ham. Then wrap the ham in aluminum foil using 2 separate pieces that overlap at the top. This will allow you to open and glaze without having to unwrap the whole ham.
  5. Place ham in a roasting pan and bake in the oven until the internal temperature reaches 100/110 ℉. This usually takes 15 minutes per pound.
  6. Remove the ham from the oven and increase the temperature to 400 degrees F.  
  7. Carefully unwrap the foil, place back in the roasting pan and use another 1/3 of glaze to baste the ham
  8. Place back in the oven and bake until the ham begins to caramelize nicely (about 20 minutes).
  9. Remove from the oven and glaze with the last 1/3 of sauce.
