A rustic fresh chopped salad with tomatoes, cucumbers, feta cheese, onions, and peppers dressed with olive oil, vinegar and fresh herbs.

Ingredients
- 1 cucumber, diced
- 1 container grape tomatoes, cut in half
- 1 red peppers, diced
- 1 cup Italian parsley, chopped
- ½ red onion, diced
- 4 green onions, sliced
- ½ lb. feta cheese, diced
- 1/4 cup white balsamic vinegar
- 1/2 cup olive oil
- Sea salt
- Black pepper
Instructions
- Place all the diced and chopped ingredients in a large mixing bowl and combine.
- Add vinegar and oil and taste. I like my salad not so acidic. If you like more vinegar add a little more and taste again.
- Next taste and season with salt and pepper.
