Mediterranean Feta Salad

A rustic fresh chopped salad with tomatoes, cucumbers, feta cheese, onions, and peppers dressed with olive oil, vinegar and fresh herbs.

Ingredients

  • 1 cucumber, diced
  • 1 container grape tomatoes, cut in half
  • 1 red peppers, diced
  • 1 cup Italian parsley, chopped
  • ½ red onion, diced
  • 4 green onions, sliced
  • ½ lb. feta cheese, diced
  • 1/4 cup white balsamic vinegar
  • 1/2 cup olive oil
  • Sea salt
  • Black pepper

Instructions

  1. Place all the diced and chopped ingredients in a large mixing bowl and combine.
  2. Add vinegar and oil and taste. I like my salad not so acidic. If you like more vinegar add a little more and taste again.
  3. Next taste and season with salt and pepper.
